I find poker is both relaxing for me and at the time frustrating, there are so many different variables when it comes to cards but what gets me is how often ya get donked on the river by people that shouldnt even be in a hand

EXACTLY! I do find that it happens less when playing higher stakes. Play too low and you can't bet anybody off weak hands and eventually, you get burned.

Aaaa, I so felt you because I usually get somehow in both positions, either getting out on the river by a 2 or a 7, or to get extra lucky (my luck is special somehow so when it hits I kinda feel it 😂🤔) with the exact required card to make a badass hand 👌😎
