Its hard, especially in MTT because the tables change so often so theres not a lot of time to learn your opponents playstyle.

The only and best thing is your observation and your notes that you will make in the process of those observations. Only by observing the actions of your opponents in certain situations will you develop an understanding of their game and its peculiarities.
